chewy one-pot GF oatmeal cookies

3/4 CUP GLUTEN FREE FLOUR (I used this one or this one)

1 1/2 CUPS OATS (best if you use sprouted oats - I use this one)

1 TSP. CINNAMON

1/4 TSP. NUTMEG

1/4 TSP. SALT

1/4 TSP. BAKING SODA

1/2 CUP UNSALTED ORGANIC GRASS-FED BUTTER OR COCONUT OIL

1/2 CUP MAPLE SYRUP

1 LARGE EGG BEATEN

1 TBS. VANILLA EXTRACT

1/4 CUP RAISONS (OPTIONAL) or 1/4 cup of chocolate chips

DIRECTIONS:

PREHEAT OVEN TO 350 DEGREES. IN A SMALL POT, MELT BUTTER AND REMOVE FROM HEAT. ADD IN WET INGREDIENTS: MAPLE SYRUP, EGG AND VANILLA EXTRACT - MIX TOGETHER. ADD IN DRY INGREDIENTS: FLOUR, CINNAMON, NUTMEG, SALT, BAKING SODA, AND OATS - MIX TOGETHER. Let it cool a bit. ADD IN RAISONS/CHOCOLATE CHIPS once it has cooled down (so they don’t melt!).

SCOOP BATTER WITH SPOON AND PLACE ON PARCHMENT-LINED BAKING SHEET.

COOK FOR 10-12 MINUTES OR UNTIL GOLDEN!

ENJOY THEM FOR BREAKFAST OR A SNACK!
