summertime zucchini muffins

Hair wraps + friendship bracelets + zucchini muffins = a perfect summer!

1 CUP ZUCCHINI

1 BANANA

3/4 CUP COCONUT FLOUR

1 TSP BAKING SODA

1/2 TSP SALT

1/2 CUP COCONUT OIL - MELTED

6 EGGS

8 PITTED DATES 

1 TBS VANILLA

1 TSP CINNAMON

1/4 TSP NUTMEG

1/4 CUP COCONUT MILK OR MILK OF CHOICE

PEEL ZUCCHINI AND DICE IN FOOD PROCESSOR UNTIL SMALL.  PLACE IT IN A BOWL WITH A PINCH OF SALT AND LET IT SIT WHILE YOU MIX THE OTHER INGREDIENTS.

SOAK DATES (IF HARD) IN WARM WATER UNTIL SOFT, THEN DICE IN FOOD PROCESSOR. 

MIX ALL INGREDIENTS.  

DRAIN WATER FROM THE ZUCCHINI AND THEN MIX IT INTO THE BATTER.  FILL 12 MUFFINS CUPS. 

BAKE AT 350 DEGREES FOR 30 MINUTES OR UNTIL GOLDEN!
