cocoa-coconut bites with peanut butter drizzle

CHOCOLATE COCONUT BITES:

2 CUPS SHREDDED COCONUT

1/4 cup raw cacao

1/2 CUP MAPLE SYRUP

2 1/2 TSP VANILLA

ADD ALL INGREDIENTS IN A FOOD PROCESSOR. MIX UNTIL COMBINED.  WITH A TABLESPOON, SCOOP OUT MIXTURE AND ROLL INTO A BALL.  PLACE ON PARCHMENT-LINED PAN.

PEANUT BUTTER DRIZZLE:

1/4 CUP PEANUT BUTTER (can substitute sunbutter)

1 TBSP RAW HONEY

HEAT PEANUT BUTTER IN SAUCEPAN ON LOW HEAT UNTIL SMOOTH (DO NOT LET IT GET HOT). REMOVE FROM HEAT AND STIR IN RAW HONEY.

DRIZZLE OVER BITES AND PLACE IN REFRIDGERATOR FOR 1 HOUR. ENJOY!
