I've been on an einkorn flour journey for a while now, and let me tell you, it’s been fun!

WHY EINKORN flour?

While I don't have celiac disease, I usually stick to gluten-free goodies because my tummy isn’t a fan of gluten. The good news? I’ve found that I can enjoy einkorn flour!

It has a lower gluten content than other wheat flours, which makes it much easier on my digestive system. (Just a quick note: if you do have celiac disease, einkorn won’t be your friend.)

What I love most about einkorn is its rich history. It's one of the very first domesticated grains, which means people have been baking with it for thousands of years. Plus, it’s packed with nutrition! Einkorn boasts higher levels of protein, zinc, iron, and those wonderful B vitamins compared to regular wheat flour. So not only do I get to enjoy delicious baked treats, but I’m also fueling my body with wholesome goodness.

These whip up in a few minutes so don’t be afraid to try them on a busy morning! Double the recipe and you can snack on them all day long!

simple einkorn flour pancakes

Ingredients:

1 cup einkorn flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cups plain yogurt + 1/4 cup water

1 large egg

2 tablespoons melted butter or coconut oil

1 tablespoon vanilla extract

directions:

  1. In a large bowl, mix flour, baking powder, baking soda and salt.

  2. In another medium sized bowl, mix yogurt and water together, add in egg, melted butter and vanilla and whisk until blended.

  3. Pour liquid mixture into dry ingredients and mix until lumps disappear.

  4. Cook in butter on a hot pan.

  5. Serve with butter, maple syrup, raw honey, or warm blueberries.
