grain-free fluffy pancakes

It has literally taken me 2 years and 50+ trials (aka fails) to find a pancake recipe that is grain-free (hence gluten-free), nut-free, fluffy, and most importantly, delicious! 

 

1 cup casssava flour (I use this one: Otto's Naturals 100% Natural Cassava Flour)

1 cup coconut flour (I use this one: Let’s Do Organic Coconut Flour)

1 1/2 tsp baking soda

1 1/2 tsp salt

5 eggs

1 cups organic grass-fed plain yogurt - preferably raw

2 tbsp vanilla extract

4 tbsp melted butter or coconut oil

2 + cups water 

2 cups frozen organic blueberries (optional)

Mix dry ingredients.  Add in wet ingredients.  Mix well. Let it sit for a few minutes for the coconut flour to soak up the liquid.  Add more water if it needs to be thinned out. 

Butter your pan and sizzle them up! 

Warm up the frozen blueberries and pour them on top!
